Whole Grain Rice & Cheese Stuffed Peppers

  • 2 tbsp Olive Oil
  • 6 Bell Peppers, washed and cut in half - remove all the seeds
  • 300g Cream Cheese
  • 2 packets Uncle Ben’s Whole Grain Rice (flavour of your choice)
  • Grated Cheddar Cheese or Feta Cheese enough to cover each of the half peppers


  1. Preheat fan oven to 200 degrees

  2. Wash the peppers and slice long ways in half and de-seed and place onto a chopping board

  3. Using the back of a teaspoon evenly distribute the cream cheese between each half of the peppers enough to create a thin blanket of cream to coat the inside of the pepper

  4. Empty the rice packet into a bowl and using a spoon fill each half pepper with rice

  5. Sprinkle over or cover the rice with the cheese

  6. In an overproof dish lightly drizzle the olive oil and carefully place in the filled peppers

  7. Cover the dish with foil and place in the oven

  8. Cook for about 1hr or until the peppers are nice and soft

  9. Serve on their own or as a side dish.
