Cheesy Chicken Alfredo Pasta Bake

  • 1 tsp Coconut Oil
  • 3 Skinless Chicken Breasts, chopped/sliced
  • 2 Garlic Cloves, diced
  • 500 g Penne Pasta cooked a la dente (alternatively use Gluten-Free Pasta)
  • 450 ml Chicken or Vegetable Stock (Gluten Free)
  • 300 ml Double Cream
  • 100 g Cheddar Cheese, grated
  • 50 g Parmesan, grated
  • 100 g Mozzarella, grated
  • 100 g Spinach, washed
  • Salt and Pepper, to season
  • Olive Oil


  1. Pre-heat a fan oven to 180 degrees

  2. Cook the pasta until it is al dente (firm) following the packet cooking instructions, drain and set aside

  3. While the pasta is cooking in a large saucepan/casserole cooking pot, add the coconut oil over a medium heat and add the chicken

  4. Season with a little salt and pepper

  5. Once the chicken is cooked through and white, add the garlic and cook for another 2 minutes

  6. Pour in the stock and the double cream

  7. Add the cooked pasta, cover and simmer for up to 10 minutes until you have a creamy texture, stirring occasionally

  8. Add the cheddar cheese and parmesan and stir through

  9. Turn off the heat and add in the spinach and stir through

  10. In a lasagne dish or oven proof dish, lightly drizzle some olive oil in the base and pour in the pasta mix and level the pasta out

  11. Add the mozzarella over the top and place in the oven for 10-15 minutes until the the top is a light golden colour

  12. Remove from the oven and leave to cool for a few minutes before serving up with a side of garlic bread or a big green salad
