Mediterranean Beauty Bowl

  • 1 packet Pre-Cooked Whole Grain & Quinoa (220g)
  • 6 Slices Grilled Halloumi
  • 4 Large Eggs
  • 1 large Avocado, sliced
  • 2 Vine Tomatoes, diced
  • Large Handful of Pomegranate Seeds
  • 1 Lime, Juice
  • Salt & Pepper, to season
  • Extra Virgin Olive Oil, to drizzle


  1. In a small saucepan carefully add the 4 large eggs and fill with cold water to cover

  2. Over a medium to high heat, cook the eggs for 10 minutes for a hard boiled egg, remove from heat and rinse in cold water, set aside

  3. Meanwhile, while the eggs are boiling away, on a medium grill heat, grill the  halloumi for a few minutes on each side and place to the side 

  4. Cut and slice the avocado and tomatoes

  5. Heat up the pre-cooked wholegrain and quinoa in the microwave, following the packet instructions, usually around 2 minutes

  6. Now that the egg shell has cooled, peel the egg shell and cut the eggs in half from top to bottom

  7. In a pasta bowl or serving bowl pour in the cooked quinoa and level out the top with a fork

  8. Lay the eggs down one side of the bowl, then the halloumi, avocado and tomatoes, so they all lay side by side

  9. Season everything with a little salt and pepper to taste

  10. Garnish with the pomegranate seeds, lime juice and extra virgin olive oil

  11. ....and enjoy!
