Meat-free & Vegan Turkish Potato Kofte's
In a large mixing bowl add all the ingredients and use your hands to mix everything together for a few minutes
On a chopping board make up your Kofte's in the palm of your hand into desired kofte/meatball shapes using a little water on your fingers to stop them from sticking - you will have between 30-40 Kofte's
While making up the kofte's heat the vegetable oil in a large frying pan on a medium heat
When the oil is hot carefully place the Kofte's into the pan using a slotted spoon until the frying pan is full, leave a little room between the Kofte's so they don't stick together - you will have to batch cook them.
Cook for around 4-5 minutes until brown. Using the slotted spoon turn them over and cook for the same amount of time until the Kofte's are an even rich brown colour all over.
Once cooked, using the slotted spoon remove the Kofte's carefully and place them into a clean large bowl lined with kitchen paper (this soaks up any excess oil) and cover while you cook the rest of the Kofte's.
Serve with a big Mediterranean salad and cold Mezze's, warm homemade flatbread and even some homemade chips for the kids.
