
Dairy Free & Yeast Free Easy Cinnamon Loaf Recipe - perfect for afternoon teas or as a sweet treat to share with the family
Preheat fan oven to 180 degrees
Line a bread pan with parchment paper so that it over laps the outside of the pan so that its easy to pull the loaf out when cooled
In a mixing bowl add all the dry ingredients - flour, baking powder, sugar, salt and cinnamon
In another bowl add the wet ingredients - vegetable oil, eggs, almond milk and vanilla extract
Add the wet mix to the dry mix slowly while using a wooden spoon to mix the mixture to create a smooth consistency with no lumps
Pour the mix into the lined bread pan and level the top
Mix the 1 tbsp of caster sugar with the 1 tsp of cinnamon and dust over the top (after cooking, the excess will fall off as you pull the bread out of the pan) this will create a little texture on top of the loaf
Bake in the centre of the oven for around 50 minutes
Leave to cool in the pan for 5 minutes before removing it using the parchment paper
Leave to cool on a cooling rack for a further 10 -15 minutes
Meanwhile mix together the icing sugar with a little water (add the water slowly so that you can control the consistency so it isn't too watery)
Leaving the bread on the cooling rack using a teaspoon drizzle over the icing up and down, left and right, it doesn't need to be perfect
Serve straight away or cut up and wrap up in air tight paperbags, clingfilm or foil and store at room temperature
