Fig & Dark Chocolate Oat Chunks

Healthy Treat for those days when you have a sweet tooth craving!

Ingredients

  • 75 g Coconut Oil
  • 50 g Honey
  • 50 g Coconut Sugar
  • 80 g Rolled Oats/Porridge Oats
  • 100 g Ground Almond Powder
  • 1/2 tsp Ground Himalayan Pink Salt
  • 1 Large Egg, beaten
  • 100 g Sultanas
  • 50 g Dried Figs, roughly chopped
  • 50 g Dark Chocolate – 70% Dark Cocoa, broken into small chunks

Instructions

  1. Preheat fan oven to 180 degrees

  2. Line a deep baking tray or a brownie tray with grease-proof parchment paper

  3. Melt the coconut oil over the hob in a small saucepan

  4. Remove from the heat and mix in the honey and then the sugar and set to one side

  5. In a large bowl add the oats, almond powder and the salt and mix together

  6. Pour over the coconut oil mix and combine well into the bowl of dry ingredients

  7. Add the beaten egg and mix well

  8. Add the figs, sultanas and the chocolate and combine well

  9. Using a wooden spoon, spoon the mixture, starting from one side of the tray, smooth out the mixture and roughly flatten the surface of the mixture (this amount won’t cover the whole of a baking tray so use the wooden spoon to smooth out the edges as this will give you even chunks when you go to cut it up at the end)

  10. Place in the oven and bake for around 13 minutes until the top of the mixture has set, to check if it is cooked through, use a toothpick and if it comes out clean it is done

  11. Leave to cool in the tray

  12. Once cooled, cut up square like, bite sized chunks and enjoy (in moderation!)
