
Mediterranean-inspired beauty bowl - superfood fuelled nutrients and healthy fats for healthier looking skin!
In a small saucepan carefully add the 4 large eggs and fill with cold water to cover
Over a medium to high heat, cook the eggs for 10 minutes for a hard boiled egg, remove from heat and rinse in cold water, set aside
Meanwhile, while the eggs are boiling away, on a medium grill heat, grill the halloumi for a few minutes on each side and place to the side
Cut and slice the avocado and tomatoes
Heat up the pre-cooked wholegrain and quinoa in the microwave, following the packet instructions, usually around 2 minutes
Now that the egg shell has cooled, peel the egg shell and cut the eggs in half from top to bottom
In a pasta bowl or serving bowl pour in the cooked quinoa and level out the top with a fork
Lay the eggs down one side of the bowl, then the halloumi, avocado and tomatoes, so they all lay side by side
Season everything with a little salt and pepper to taste
Garnish with the pomegranate seeds, lime juice and extra virgin olive oil
