This meal is a perfect comfort dish for the whole family to enjoy and a meal that is full of healthy and really easy to make. If you like to plan your meals in advance you can make this dish and freeze it for a later date or use leftovers for lunch or dinner the next day.
Recently, I have been swopping my usually white potato’s to sweet potatoes in my recipes and I have found they taste so much better and give any dish that little something extra with its creamy sweet taste. I have made this recipe a few times and really wanted to update my original recipe so that anyone looking for meal ideas could use this recipe, either for meal prep or for a dinner party. This dish will wow your guest and its so quick and easy it will give you more time to sit and spend time with friends and family while it cooks.
So here is my recipe, tried and tested by children , Cheesy Sweet Potato Cottage Pie.
Preparation Time : 10-15 minutes
Cook Time : 45 mins – 1 hour
(serves 4-6)
4 Sweet Potatoes, peeled & cut into large chunks1 tbsp Coconut Oil
1 Onion, diced
2 Carrots, diced
1 Courgette, diced
Fresh Thyme, a few sprigs
500g 5% Fat Beef Mince
200ml Vegetable Boullion Stock
2 tbsp Tomato Puree
150g Frozen Peas
Himalayan Pink Salt and Pepper, to season
50g Parmesan, grated
50g Cheddar Cheese, grated
In a large saucepan boil some water and then carefully add the sweet potatoes and simmer for around 10 mins or so until tender.
Pre-heat the oven to 180 degrees fan oven
While the potatoes are boiling away, in a medium saucepan add the coconut oil and the fresh thyme and fry the onions, carrots and courgettes on a medium heat until soft, around 8 minutes
Add the beef mince and cook, stirring regularly to break the mince down into little pieces and cook until browned
Season with a little salt and pepper
Add in the tomato puree and stir well
Pour in the vegetable stock and bring to the boil and simmer for around 15-20 minutes
Take off the heat and set aside
Drain the water from the potatoes and in a large mixing bowl, add the potatoes and season with a little himalayan pink salt and pepper
Use a potato mashers or the back of a fork to mash up the potatoes until smooth
In an ovenproof dish pour in the mince and vegetables and smooth the top so its even
Pour over an even layer of frozen peas
Using a clean a couple of tablespoon, add a small layer of potato a little at a time until all the mince is covered, then add the rest of the mash over the top and level out using the back of a spoon
Add the grated cheddar and parmesan and place in the middle of the oven and bake for around 15- 20 minutes until the cheese has melted and browned slightly
Serve with a side of with your choice of steamed vegetables, broccoli is our favourite and enjoy!
