One of the easiest recipes to throw together. My family love this meal and it’s one I usually make at least once a week. We always have a load of vegetables sitting in our fridge and this recipe is a great way to use them up and also reduces food waste in your home. I like to make this recipe right before my weekly food shop, where I use up what I have and at the same time write my food shop list.

As a vegetarian I use more veggies in my meals to bulk up my dishes. I like to buy a variety of different veggies to keep my diet balanced and also to get my kids eating new foods. They love this recipe more because it has halloumi in it! As a Cypriot, halloumi is my favourite cheese, yes I know I’m biased! Roasted halloumi is the perfect meat alternative to a dish filled with veggies, it adds more texture, like meat does. You can enjoy this meal as a light lunch or for a main meal you can add some cooked rice or cous cous or even with some cooked pasta and cheese.

This versatile traybake will be a recipe you can go to for on any occasion and a great one to serve to the whole family. You can use any vegetables you have, I’ve also made this with butternut squash, cauliflower, parsnips and potatoes, so use up whatever you have.
