It’s that busy time of year, full of celebration and festive fun in my house and honestly, I just haven’t had the time to sit, write and publish any new content. My draft folder is full but as it’s Christmas time I am now saving them until New Year. I had planned a few Christmas related posts to share with you all but I have just been posting on my main Instagram “all things Christmas”.
With only 3 more sleeps until Christmas, the festive fun and baking has commenced in my kitchen and as we are spending Christmas day at my Mum’s, I have just been concentrating on baking sweet yummy treats. I’ve already baked a batch of mince pies, you can find my easy recipe here. We had some candy canes left over from decorating our christmas tree, so yesterday we used them in our white chocolate cookies bake.
These soft and slightly gooey in the centre cookies are so simple to throw together and take next to no time to bake. This recipe is so easy that you can even get the kids to give you a hand to create these family favourite cookies.
Easy & fun Christmas cookie recipe to add to the festive fun with the kids
Preheat fan oven to 180 degrees and line a few baking trays with parchment baking paper
In a mixing bowl cream the butter and add in the sugar and combine well with a whisk or wooden spoon
Add in the golden syrup and stir
Add in the flour and milk and combine well
Add in the white chocolate and candy cane chunks and mix in evenly
On a clean and floured surface spoon out the cookie dough and using your hand or a wooden spoon create sausage shape and using a knife divide into 10 even slices
Using floured hands, roll the slices into balls and place onto the lined baking tray and using your palms lightly flatten the dough into a cookie shape. TIP: Just remember to space the cookie out as they will expand while baking
Bake for around 10-15 minutes
Remove from the oven and leave for a few minutes to cool slightly before transferring them to the a cooling rack
Enjoy straight away or leave to cool and store in an airtight container for a few days at room temperature

Good post! I’m wondering though, are the candy canes in the cookies overly crunchy? I know you said they’re soft and gooey but how with the candy cane peieces? Do they soften while baking?

Hi Bree, I’ve just seen your comment. No, they melt when cooking as I roughly smash them up to smaller pieces, its just like have sprinkles 🙂 so the cookie is soft!
