This has to be my most requested recipe from cooking on my Instagram. My family love paella! It is a healthy and easy family meal to enjoy any day of the week. Any leftovers my husband takes it to work the next day for his lunch.
I’ve eaten a Paella out at a couple of restaurants before but it is on my bucket list to visit Spain and enjoy a traditional Spanish paella, one day!
Like I have said before, cooking at home from scratch is great because you know what goes into your food and when you have this flexibility you can substitute ingredients to suit your dietary needs.
A paella can come in many forms, as a vegetarian paella, meat paella or a seafood paella. I am sharing the basics of this recipe with you and will leave the final result for you to produce what suits your mood. Play around with what ‘meat’ ingredients you want to include or opt for a vegetarian option by adding in extra vegetables in the first stages of cooking.
So here it is my Chicken, Chorizo & Prawn Paella recipe.
Cooking a traditional Spanish dish at home made easy..
In a large wok, casserole pot or a large pan with a lid, pour in a few tablespoons of olive oil over a medium heat
Add the parsley stalks, garlic, onion, carrots, chicken and chorizo and sprinkle over the smoked paprika and mix well
Cook for 5 minutes until the chicken is cooked through
Add the bell pepper and cook for a further 5 minutes
Stir through the tomato purée
In a jug pour 600ml of boiling water and dissolve the chicken cube
Add the paella rice and stir through cooking for a few minutes
Pour in the stock, season with a little salt and pepper and stir well
Bring to the boil and simmer for around 15 minutes, cover, stir regularly from inside out and outside in for the paella rice to cook through evenly (add a splash of boiling water if it starts to stick or the rice is still not cooked)
Add the peas and prawns and stir through and cook for a further 5 minutes until the prawns are heated through
Remove the pan from the heat and sprinkle over the parsley and serve with the lemon wedges
Enjoy with a side of Mediterranean salad or a leafy greens salad
